Peanut rice recipe – Simple, aromatic and delicious rice made in South Indian style. A perfect winter recipe made with roasted peanuts, sesame and other ingredients, rich in vitamins and minerals which is essential especially for winter. A very simple and easy to make rice variety.

Rice – 2 cup (cooked)
To Fry/Dry Roast:-
Peanut – 1/2 cup
Urad Dal – 1 1/2 Tsp
Sesame (white/black) – 2 tsp
Dry chilies – 6 no’s (adjust to your taste)
For seasoning: –
Oil – 1/4 cup
Mustard – 1/2 Tsp
Peanut – 2 tbs
Curry leaves – 3 springs
Asafoetida – 1/4 tsp
Coconut – 1/2 cup grated/shredded
Coriander – 1 small bunch chopped
Salt to taste

Recipe Credit

  1. Rinse rice, drain the water in it, add 4 cups of water to cook 2 cups of rice, pressure cook it for 3 whistles, once done allow it to cool/ spread it in a wide vessel and keep ready.
  2. Take a shallow pan add all the ingredients one by one, dry fry all the ingredients separately.
  3. Allow the roasted ingredients to cool for a while (spread it on a dry plate for 10 min) then transfer it to a blender, make a coarse powder and keep ready.
  4. Keep all the ingredients for seasoning handy, Heat oil in a pan, when it is hot add mustard seeds, allow it to sizzle, add peanut fry until it turns to golden and crisp, then add curry leaves, asafoetida saute few seconds, switch off the flame, immediately add ground powder, grated coconut, and salt to taste, saute well.
  5. Combine with cooked Rice, Toss it well. Garnish with fresh coriander.
  6. Aromatic Peanut rice is ready to serve
